Somewhere Over the Rainbow... My Girls' Birthday Party

Posted on 22:40 by Unknown

Whew! We have been back in our home for almost a week now and it feels really good to be back in our space, but we are still going through some re-entry adjustments.

All in all, we had a great furlough... it was busy, but fruitful. We've come away with many new memories and my girls' birthday party is one of them.

My two oldest girls, Naomi & Tabitha, are unique... they are my Labor Day babies. Both born on Labor Day two years & 3 days apart. I always say God sure has a sense of humor having me go to labor and birth on Labor Day... not once, but twice in a row!

For the past few years, we've celebrated the girls' birthdays right at the beginning of our yearly furlough. I did my best with doing simple birthday celebrations for them, but this year decided to really go an extra mile and put in extra effort to really throw a party for them.

I actually started planning, by accident, back in May!

It all started on Pinterest... of course (rolling eyes). I was simply browsing around and a beautiful picture of a rainbow cake caught my eye... not only that, but the caption said something about using homemade, all natural dyes.

Yep, that caught my attention and an idea started blooming in my mind.

That's when I started my 'Birthday Pin Board'. Gotta love Pinterest!

I started planning, pinning and made a list...

Girls' Birthday Party - Rainbow Theme

Rainbow skirts for all 3 girls.
   - measure them (waist & length)
   - ask a friend if she can make 3 of this rainbow skirt.

Birthday banners
   - rainbow colors
   - order from Etsy

Small Plastic Horses
   - spray paint them in red, green, blue, purple & orange (orange turned out hideous!)

Cake Stand
   - ask a friend to make a simple kind using a wood circle and old ice cream sundae glass.
   - spray paint white or red?

Rainbow Cupcakes
   - contact a friend to help make the cupcakes
   - bake in mason jars
   - make simple buttercream frosting
   - make rainbow sprinkles using natural, homemade dyes and coconut sprinkles

Rainbow Fruit Sorbet
   - buy fresh or frozen fruits (strawberry/banana, mango, pineapple/banana, kiwi and
     blueberry)

What made this a successful party was my asking for help from friends. I learned from past experiences that I couldn't pull off a simple party like this without some help!

All of them were glad to do it... especially for the girls. You all know who you are, thank you!

The girls knew they were having a small party, but the theme was a surprise. I knew there was no way I could plan a complete surprise party, but I can surprise them on the theme!

I had originally planned to do the party on my parents' front enclosed porch where the walls are a fresh white, making the room bright and sunny. I wanted to string up the banners across the room to give it a festive look.

My mom did a great job decorating the enclosed porch with fun mix-matched chairs, plants and pictures that all basically match with the colors of the rainbow theme.

In my mind, it was a perfect set up and excellent for taking good pictures. Plus, there was enough room for everyone who was invited to sit comfortably and enjoy the party!

But right when we arrived to my parents' house from Honduras... the weather took a turn from comfortably warm to super hot all week.

It was a melting 100 degrees outside by early afternoon on the party day. Waah!

I was SO disappointed, but made the choice to shake it off and make the best of it. The party was not about making everything look perfect, but for my girls and they don't care if the set up is perfect or not... it is the thought, effort, joy and excitement that counts and that is what they will remember.

I asked my hubby to help me bring in the yellow, retro 50s table (a wedding gift from my parents to us) from the porch and pushed it up to the window... there I pulled back the curtains as far as it would go to allow as much light in as possible.

Sigh... not how I wanted to look, but I knew my girls will still love the surprise.

I get to work prepping for the party... getting my colorful stripe dishes out (my family kept them for us when we moved to Central America!) and setting up everything on the table.

I also started working on the rainbow fruit sorbet, which I will share more below. My friend dropped off the cupcakes and I send my mother-in-law out to the garage to spray paint the mini-horses.

During this time, the girls were kept busy upstairs so they wouldn't see their 'surprise' party.

Once the mini-horses were dried. I set them up on the cupcakes... they were perfect. Do they look awesome?!

I did have orange spray paint, but it came out clumpy and a hideous bright orange color. The paint was coming off and I didn't like the idea of eating bright neon orange paint with my cupcake. Those poor neon orange horses got tossed aside.

The colorful sprinkles on top... those are actually coconut flakes that have been naturally colored!

I will have to do a post on how to make homemade colored sprinkles with coconut flakes. It is pretty simple and a fun project that I know my girls will enjoy! The sprinkles really perked everything up. I almost didn't even want to do them, but change my mind later. So glad I did!

I set up all the jars on the cake stand and around the front of the stand on the table. I was so pleased with how everything was coming together. Shows how a good attitude helps you see everything in a different & better light!

So, using the natural rainbow cake recipe... my friend helped make these rainbow cupcakes and the buttercream. Do they look lovely and natural?!

She was concern the colors weren't bright enough, but I wasn't expecting the bright, obnoxious, artificial rainbow colors and thought they looked perfect and so natural. Like they should look!

For the ingredients, I originally wanted to use sprouted flour, but the bag I ordered didn't come in time. We made do with regular whole white wheat flour with a little bit of unbleached flour. We used organic cane sugar, but we cut the cane sugar back by a 1/2 cup or so. We also cut the sugar back in the buttercream. My girls don't like sweet cake (woohoo!) and neither do I.

The cake was a little dense & chewy, but tasted really yummy and the buttercream was perfect with it. Even my husband, who is not a fan of cakes, really liked it a lot!

Next is the rainbow fruit sorbet.

Of course.

Me being the "Ice Cream Queen" and recently knighted as "The Ice Cream Mentor" by some of you guys... I had to make and serve some form of homemade ice cream for the girls' party!!

My parents have an ice cream maker, but I didn't have time to re-freeze the bowl over and over to get all the rainbow colors. So, I did a short-cut that is super easy and a no-fail method!

You can actually find the tutorial of how to make the rainbow sorbet in my ice cream ebook, Just Making Ice Cream... there's even a picture of it on the front cover!

Hmm, maybe I will share with you how I make these fantastic rainbow sorbets in a later post... with a video, maybe  ;o)

Anyway, I like to mix banana with the frozen strawberries and pineapples because of their higher water contend... which can make them very icy once frozen. The banana helps them stay creamier and makes it easier to make nice scoops once the sorbet thaws a little.

Man, the textures and colors of this rainbow sorbet is just downright delicious! When thawed a bit, the sorbet scooped up beautifully. See the last picture below.

Next, I send up the girls' outfits. Darling rainbow skirts handmade by a local friend!

I finished prepping everything and got my photos done. Just before we were expecting our guests to arrive... I called down the girls and we got ready with our cameras to capture their expressions when they saw the table.

As you can see... they loved it!

"Oh mama! The horses look so cute! Did you paint them?"

"Mama made rainbow sorbet! Yea!"

"Ooh, look at the colorful cakes in the jar!"

"Look, there are sprinkles on the frosting!"

"We are having a rainbow party! Thank you Mama!"

Even though Poema's birthday wasn't until October I still had to have a skirt made for her!!

Don't they all look darling?!

I am humbled and honored that the Lord has blessed me with 3 girls. I have a big responsibility in raising them because they will be learning from me as they grow up.

I pray that my life will lead each of them to desire a relationship with our Lord and follow Him all the days of their lives.

I want to show them a love of life that can found only in Jesus.

I want to be an example of a humbled wife that loves and submits to her husband through everything. I want to show them the joy that can be found in family and children, no matter how challenging it can get.

When I pass on from this world, I want to be remembered by them as a woman, wife and mama who loved Jesus with all her heart, soul, mind and strength. Leaving them inspired to do that same.

That's a big and sometimes scary responsibility. I am human and make mistakes, but I remind myself that my girls don't need me to be perfect... they just need me to be real and humble.

That's all.

The party was a hit. The cupcakes were delicious. The rainbow sorbet was yummy. Everyone enjoyed their time with us and celebrating the girls' birthdays.

Thank you Lord for another year that we can celebrate with our 3 special girls!

Would you like a scoop of rainbow sorbet??  :o)

Strawberries & Thankfulness

Posted on 14:03 by Unknown

Day before Thanksgiving day, I checked our small strawberry patch and what did I find?

Our first 2 beautiful, deliciously red & sun-riped strawberries!

It is simply crazy for me to think that in the USA everybody have finish up harvesting their garden bounties and huddling up for winter, while we are watching our strawberries flowery, forming and slowly growing.

This is my first time growing strawberries. I never thought it would be possible to grow strawberries up here, but they are growing beautifully & organically!

They smelled earthy, fresh & sweet! My girls and I couldn't stop smelling them. Hmmm!

So, I had to hold the girls back from eating those two precious gems and wait for their Daddy to come home to share the love. Seriously, what is better than a simply strawberries & cream?

Now, on a different thought...

The night before Thanksgiving Day, like everybody else, I started thinking about things I was thankful for... Of course, there is so much and it comes naturally to think of all the good things when all is good.

But...

What about everything else I should be MORE thankful for? Having the attitude of thankfulness It a 24/7 choice we make. Not just on Thanksgiving Day!

So my thoughts changed direction... What things in life should I have the attitude of thankfulness?

Am I thankful when I might not have the house I want? Am I thankful for the things I already have? Am I thankful that God called my family to be missionaries? When my healthy son wakes me up in the middle of the night to nurse, am I thankful?

Are you thankful for that job, even when you don't like it or it doesn't pay well? Are you thankful for the trials in your life? Are you thankful when you struggle with your weight? Are you thankful for that car you have? Are you thankful for that person that bothers you?

Are you thankful for the life God has given you... good & bad?

"Let your roots grow down into him, and let your lives be built on him. Then your faith will grow strong in the truth you were taught, and you will overflow with thankfulness."
Colossians 2:7 (NLT)

"And let the peace that comes from Christ rule in your hearts. For as members of one body you are called to live in peace. And always be thankful. Let the message about Christ, in all its richness, fill your lives. Teach and counsel each other with all the wisdom he gives. Sing psalms and hymns and spiritual songs to God with thankful hearts."
Colossians 3:15-16 (NLT)

"Devote yourselves to prayer with an alert mind and a thankful heart."
Colossians 4:2 (NLT)

"Be thankful in all circumstances, for this is God’s will for you who belong to Christ Jesus."
1 Thessalonians 5:18 (NLT)

Life is Beautiful

Posted on 19:50 by Unknown

I can't believe we now have 3 kids... wow. If you told me 10 years ago that I would be a missionary living in the rural area of Honduras with 3 beautiful kids and my hubby. I probably would've try to run away... like Jonah! LOL!

Honestly... life here is hard and a daily struggle, but I am so glad I am not truly alone. I have my best friend and husband, Jon, to keep me going each day. I have my relationship with my Lord to keep me focus on my calling as a wife and mother. I have my 2 girls and little man to keep me plenty busy!

I am daily learning what it means to die to myself and serve my family. It is a long, challenging road and I always remind myself... "God never said life would be easy. He just promised it would be worth it"... It is my daily prayer to meet each new day with a light heart, joyful attitude and LOTS of singing  :o)

Please enjoy our new family pictures!

Where's Tabi? LOL!

Just Making Noise´s One Year Anniversary!

Posted on 11:09 by Unknown
Today marks the one year anniversary of Just Making Noise! As you all know, so much has happen since the starting of my blog. I have so much to share! So, again... I ask that you get comfortable in your chairs, couches, counter stools or whatever you are sitting on at the moment.

I wish I could say that this is a happy day, but to be honest... I woke up with tears in my eyes and a heavy heart. The first thought that came to my mind was... I can´t do this!

Living in Honduras as strip away most of the comforts that I´ve grown up with and it has been hard. There are days where I wish I had a Trader´s Joe or health food store just around the corner and my friends close by, but I don´t. Thankfully, I was given the opportunity to check my email and blog without the girls so I can focus, get some things done and get caught up (Thanks to my wonderful family). Of course, I wanted to see what people had to say about my last post and one caught my eye:
Thanks so much for letting us in on your life and giving us specific ways in which to pray for you and your family. I feel I have found a kindred spirit in you and your blog. Today alone I made 2 of your recipes (Rise-n -Shine Smoothie & Kefir Sourdough Pizza) - both were delish! Will be praying for you and your family as you make this transition to Honduras.
Here's a section of Scripture that has encouraged me as of late: Phil 4:11-13 "Not that I am speaking of being in need, for I have learned in whatever situation I am to be content. I know how to be brought low, and I know how to abound. In any & every circumstance, I have learned the secret of facing plenty and hunger, abundance & need. I can do all things through him who strengthens me. "

Thank YOU Child of Grace and each one of you who left my blog with prayers, scriptures and encouragement. It warmed my heart knowing that you all care and are praying for my family. Now I feel so much better! Of course, I have my Lord Jesus and know I could not do anything with Him.

Now, I have many little things to share with you all:

Tabitha Update
Your prayers for Tabi were heard and she is about 95% healed. THANK YOU!! Her skin is returning to normal and we are so grateful that we chose not to go the medical route. The natural route DOES WORK... just need to be patience to allow the body to heal and straighten itself out. So often we want the problem(s) to be gone right now and I am guilty of that, but I am so glad God used Tabi´s skin issue to teach me a new level of patience. Please don´t think I´ve got it all together... I don´t, I still have so much to learn about patience and letting God be in control. Please keep praying for me and healing for Tabitha, thank you!

Real Food Media
I´m sure most of you have noticed the new ads I have around my blog. I am thrilled to say that I´ve joined an awesome group called Real Food Media, started by Ann Marie of Cheeseslave. Looking forward to many adventures with these gals!

Giveaways
Yes, I have many giveaways coming up and hope to get them out SOON! Thank you for your patience! Also, it would be much appreciated if some of you or all of you can help me by sharing, tweeting, facebooking and blogging the giveaways when they come out. As many of you know, my time is limited on the internet and challenging. Again, any help is most appreciated!!

Now, I my time is up and I must head home. Blessings and hugs to all of you!!

There´s No Place Like Honduras

Posted on 14:58 by Unknown

Hello everyone, I’m still here! At least for now… so get comfortable in your chairs and barstools because I have so much to share, but will try to keep it short & sweet :o)

I’m at the internet café and will be there when I can till we figure out if it is possible to have internet in our place, but hopefully we will have internet in our place soon. We found a source for internet through friends that is very affordable, which is a God-thing because everything that we’ve found has been way too expensive. We are pretty much in the middle of no-where Honduras. Well, not exactly no-where… because we are where God wants us to be and we want to stay in touch with you all!

We’ve been in our new home for over two weeks now and it has been a hard adventure, yet good for all of us. God has been teaching me to be content with what we have right now… such as cold showers, outhouse for a bathroom, ticks that we daily pick off of our bodies, ants everywhere, the small drafty house that 6 of us are sharing and a small kitchen that is hard to work in. Yeah, it hasn’t been easy, but God is faithfully reminding me daily why we are here in the midst of all those things. He has also been showing me that I need to get back into fully trust in Him and let Him be in control… let Him be the God He IS! I’ve been so busy trying to fix things and cure things and control things… basically trying to do His job. I know most of you understand because we’ve all been there and done that. He’s the one who will take care of the things I can’t fix, cure or control if I would just let Him.

Wow. He makes it so easy, but I make it so difficult.

Like I said… in the midst of everything God has been so good to show me His awesome faithfulness by providing for our daily needs such as fresh milk, cheese & eggs from a Christian family in town, fresh tortillas just across the road, a sweet gal who has chickens she can sell us when we are ready, neighbors who are helpful and a beautiful place to call home sweet home. We are blessed to be here and part of that blessing is painful to receive because it requires us to sacrifice our comforts and lives to Him daily.

Please keep us in your prayers as we continue to get settled, unpack and repack (yeah, it is a very small house) adjust to living in Honduras. The adjustment is going well, but it has been hard at times because Honduras is a very poor country and very much a third world country… its almost like I am back in Africa. Honduras is the second poorest country in the Western Hemisphere & Costa Rica is the richest and most advanced Central American country. See the difference? Even though they are both third world countries, from a worldly perspective, Costa Rica has a lot to offer while Honduras struggles to get by. For example, just over 5 months ago… there was no electricity in our area and most of our neighbors still live without it. They’ve lived for years without electricity and don’t see the need for it… that’s great for them, but I can’t imagine trying to wash all Tabi’s diapers & our clothes by hand or cook all our food by fire. I don’t think I’ll get rid of my washing machine any time soon (LOL!), but I do want to learn to use the traditional Honduran wood-burning stove to make tortillas and papusas.

Even though I haven’t been here long, I have not found a farmer’s market and miss my Fridays at the Feria in San Ramon. I am starting to get discouraged. Please pray that I will find one close by! It’s the dry season right now and there is not much around. That has been one of the hardest adjustments for me because I love fresh fruits for our smoothies and fresh veggies to make my ferments & salads. I do not like buying them from the supermarket because they always taste like cleaning products (seriously!). I know many of you understand how important it is to find sources of fresh fruits and veggies locally. I am not looking for certified organic produces… just fresh, chemical-free goodness directly from a farmer! I am planning to start a small, raised-bed garden at the end of May… that is the time when everybody plants their corn and beans for the raining season. We’ll see how that goes.

So, continue to keep us in your prayers! We need them and appreciate them so much. There are two specific things:

First, please pray for my baby, Tabitha… we took her to the doctor to get a diagnosis of an itching, dry & scaly rash that developed since Costa Rica… thankfully she has been very happy and goofy despite her discomfort. The doctor believes she has Atopic Dermatitis and recommends the usual steroids that are commonly given. We’ve chosen not to go that route and are giving her homeopathy, oatmeal baths with cocoa butter and rubbing her down with lots of shea butter, coconut oil and aloe vera. But most important of all we´ve been praying for healing over her. Her skin has improve a lot since we visited the doctor on Friday, praise God! We’ve been trying to get her to take her fermented cod liver oil and high vitamin butter oil, but she refuses them… I know they will help her skin so much! I’ve tried to sneak them into her with Aquacate del Chocolate, smoothies and bananas with lots of honey. We have a cinnamon flavor and garlic flavor… she loved the latter one with mashed potatoes the other day. Any more ideas how I can “sneak” them into her? The cinnamon is pretty overpowering and she doesn’t like it much.

Second, please pray for our tick situation. Honestly, I’ve never seen so many ticks before in my life. The ticks here come in all sizes… the smallest I’ve ever seen is as small as a black dot!! You know they are there when you start to itch and see redness surrounding them. They are truly little demons. Thankfully, it hasn’t been too bad the last several days… we are hoping they are starting to die off because we’ve been keeping the cows off the property. We’ve been taking garlic tabs and rubbing ourselves with essential oils… that seems to help hold them off a bit. But we need to figure out how to get rid of them completely and keep them away for good… any ideas?? We don’t want to use chemicals, but that seems to be the only “good” option right now. Please join us as we pray in faith that God will simply sweep the little demons away so we wouldn’t have to do that.

Before I close… I want to let you all know that this month marks the 1-year anniversary of Just Making Noise! Wow! I really can’t believe how much has happened this past year and how much the blog has grown since the first post. I have several great giveaways that I have been planning for several months now, but that was before Honduras happened. I originally planned to do a whole month of giveaways to celebrate, but that’s not exactly happening. So, I will do my best to do them when I can over the next few weeks. Like I said before… I have several great giveaways, but there are some awesome ones that I will most likely save for last, so make sure you come by regularly to check them out, enter and let your friends know about it too!!

Thank you for your support, prayers, encouraging emails and comments! I am sorry that I can’t respond to all of your comments and emails, but please know that I do read every single one of them and they do mean a lot to me. I will keep you all updated as much as possible and will keep posting recipes when I can. Looking forward to celebrating with you all and keep checking back for the giveaways!

Hugs,
Mare

My 101st Post: 'Soaked & Ready' Oats, Rockin' Baby Sling Winner (15% discount) & MORE!!

Posted on 20:46 by Unknown

Whew! This past week has been very busy and fruitful! I've been so preoccupied with things around the house that I failed to notice that my previous post was my 100th! Nevertheless, I figure I could still have fun and be different by celebrating my 101st post... WOO HOO! Come on everybody... cheer with me! Yeah! That's what I'm talking about!! Woo hoo!! :o)

For this celebration I want to share an easy, make-ahead preparation of soaking & dehydrating rolled oats to use for cookies and such. For those who might not know, Oats are the highest in phytic acid and must be soaked before consumed... so all the wonderful minerals can be absorbed properly. I made large batch of this a few weeks ago and this is great to have on hand whenever you have the sudden urge to make cookies. Don't you ever have urges like that, but are unable to make cookies right then and there because you have to soak em' and all? I do!! So, after looking around and thinking what would work... I finally found a solution from a great food blog: Cheeseslave. She had Healthy Soaked Oatmeal Cookies and I saw that she would soak & dry the oats before proceeding on with the rest of the recipe. Believe me, I torpedoed straight to the kitchen to do just that! I didn't make the cookies because I do not have sprouted flour and haven't ventured out to try sprouting my own grains... yet.

Anyway. I know, I know... you all are probably thinking I should be celebrating with ice cream or something festive than old, boring oats. BUT it is worth it because I actually made cookies with these 'Soaked & Ready' Oats yesterday and they were OH SO GOOD! My family couldn't stop eating them... we ate it all in 1 day! PLUS, the cookies were vegan... yes, totally veganlious! Anyway, I'll share those with you another day... right now let's just focus on soaking and drying those oats so you can make them within minutes after getting the recipe, I promise! Okay, is this good enough now? Alright!!

'Soaked & Ready' Oats

  • 4 cups rolled oats (NOT instant)
  • 4 cups filtered water
  • 8 Tbsp. whey, lemon/lime juice, kefir or yohgurt

Warm the 4 cups of water in a saucepan (you don't need a microwave) till warm to touch. Do not let it boil!

Pour the oats, warm water and acid medium (whey, etc..) into a large glass bowl and mix thoroughly. Cover the bowl with a towel or plate & let it sit overnight in your oven or on your counter (wherever you have space).

Important: Let it sit for 8 - 24 hours... 12 hours is okay, but I always soak mine for 24 hours to reduce the phytic acid as much as possible.

Spread the oats on parchment paper in your tray or cookie pan (for oven drying) and put in dehydrator set on the highest temp (if you have that option... I don't) until completely dry. It can take anywhere from 6 to 24 hours... depending on your dehydrator. You can dry the oats in your oven set on the lowest temperature.

When the oats are dried, you will be able to break them into chunks. Put the chunks in your food processor or blender and pulse until coarsely ground (kinda like oatmeal flakes). Don't grind it fine unless you want oat flour.

Pour the oats in a sealed container and store in your fridge or in a cool, dark place. Ta-daaa! There you go... you have 'Soaked & Ready' Oats for satisfying your urge to make cookies! Remember, you can make this however much you want. When I first made these, I used 8 cups of rolled oats. Just make sure you add everything up correctly.

Now keep stay in touch for those veganlicious cookies!!!! UPDATE: Check out my step by step videos on making the S&R Oats!

My life this past week... whew!

This past Friday and Saturday I soaked & dehydrated almonds and dehydrated pineapple & papaya. I love the smells that wafted through our house! Especially through the night! My favorite is when we are dehydrating chamomile for tea... ahhh, smells soooo good! By the way, I am on the look out for a good dehydrator with a price tag that won't bite our budget. Mine is definitely heading its way out to the dehydrator heaven :o(

Saturday morning, we had Kid's Club in the neighborhood next to us and it was very simple, but GREAT. It was just me and my hubby along with the girls. Usually my mom and a friend would be there to help, but they weren't available. We had a great time playing games, read a Bible story, sang songs and just hanging out till past noon.

Sunday, had a GREAT day with the girls and my hubby! What more could I want?!

Monday, between taking care of the girls, washing diapers, letting the chickens out & feeding them, playing with the girls, hanging diapers, washing clothes, reading to the girls, hanging clothes, preparing lunch, bringing in the still wet clothes in before it rained, feeding all of us and more... I made about a pound of cultured butter! This is my second round and I feel much more confident! I finally found a great source of fresh organic milk AND cream. The other farmer I was buying our milk from couldn't (wouldn't, really) give me just cream so I could make butter. Anyway, I am happy with our new milk connection. I could not believe how much butter and buttermilk I got out of 1 liter of cream... Woo hoo! I want to do another post and this time... use our flip camera and video the process. Really, it is so easy if you have a good food processor or blender. OR you can put some in quart jars and have your kids shake it all over the place! My girls aren't quite ready for that, but when they are... I will make sure video it and share it with y'all :o)

Tuesday, my parents finally arrived home safely from Panama. They did a seminar and had a great time... they brought with them some seriously RAW honey and RAW coconut oil produced by a Tico in Dominical, Costa Rica. The honey is extremely different from anything I've had and DELICIOUS! It has such a heavy, darkly sweet flavor... hard to describe. The bees are wild from the mountains... oh yummy! The coconut oil has an interesting toasty, nutty flavor and very intense. I am really happy to finally find a local source of coconut oil that actually tastes good, but it is a bit pricey for the 3 small bottles. We've been bringing down coconut oil from the States because I've had no luck finding good tasting coconut oil around here (they all tasted either like gasoline or tar, ugh!). Below, you are seeing my little Tabi playing with the bottles... she just wouldn't leave them alone long enough for me to take pictures. So, I thought it would actually be even better to include her in... is she ADORABLE?! :o)

Yesterday, I spent a good part of the morning writing up my comments on the Foodie Fights Battle 14 entries and choosing the winner. Honestly, I was excited to do this and enjoyed being one of the judges... but very disappointed that only 3 actually submit their entries. Oh well, it is what it is! Please head on over there and see who won this round!

Also, did I tell you that I made some seriously veganlicious cookies?! I haven't made cookies in a while and it was so great to have my 'Soaked & Ready' Oats in hand. I had that urge and realized it has been toooooo loooong since I've smelled cookies wafting outta my oven! LOL! Don't worry, I'll share them with you ASAP!

Well, this was a long post! Not sorry about that :o) I hope you enjoyed reading and celebrating with me! I really can't believe that this is my 101st post and that I've had over 19,000 views since I first started this blog back in March of 2009. I have learned so much, seen so many awesome blogs & met many great people out there! Thank you everybody for your support and looking forward to sharing more recipes and my life in Costa Rica :o)

Have a great weekend and remember to take a moment to enjoy your surroundings!

The 'Soaked & Ready' Oats is part of Pennywise Platter Thursday.
